Craft chocolate is a very different experience from commercial chocolate and it can be confusing trying to work out where to start. 

We find that the best way is to start at the lower percentages and work your way up until you find your limit point. This way, the more delicate tasting notes of the lower % chocolates will not be overshadowed by the higher ones.
